I don't have many details at this point, but I live in Glendale, AZ, and know more about their current fleet than other cities in AZ.
But...pretty much in general Phoenix is now partial to American LaFrance Mid-Engine/Rear Pumpers Eagles (Tradtional Red). These are the vehicles they are newly purchasing.
Mesa which is East of Phoenix is partial to Pierce engines, Quantum, I believe (white with blue pinstripe.)
Glendale, which borders west of Phoenix has been partial to E-one's. They have been recently purchasing Saulsbury Scorpion Mid Engine/Rear Pumpers [Detroit Diesel/Hale] (White 'top' over yellow (real yellow, not green-yellow!) Glendale finally added Federal 'Q''s to the new trucks.
The larger vehicles are other companies though. The new ladders are still e-ones. Glendale's fleet features an E-One Bronto Truck, only one other in AZ in Tempe.
They just purchased in fall an American LaFrance Rescue, I believe it is a walk-around. It will be stationed with a ladder at the new station 159 (artist redering below) not sure if it's open yet.
Our ambulances are run in partership with Southwest Ambulance.

I have a small correction for your info, Mesa runs Pierce Quantums but in White with Red, the Quantums in White with Blue are Gilbert Fire , which is also dispatched by Mesa FD on Mesa's Frequency. And Glendale in addition to the partnership with Southwest recently started a partnership w/ AirEvac (Petroleum Helicopters Inc) to staff a helicopter with Glendale Paramedics to be called "Halo 151" at Glendale Airport, I posted a pic in the air ambulance forum. I forgot what the "Halo stands for but I think there is a description on PHIs website. and the 151 comes from Glendales units that are all 150's numbering sequence.
Mesa is Units 201-229 & 2200's
Gilbert is 250-259 & 2250's
A firend of mine is a Battalion Chief with Mesa Fire out of Station 201
